The United Nations declared 2016 the ‘Year of the Pulse’ spotlighting an underrated culinary fundamental. Pulses (beans) are economical, ecological, highly nutritious, and easily available. There are hundreds of types and many varieties of each. Native Americans honored beans as one of the ‘Three Sisters’ - beans, corn, and squash. Companion plants that grow well together. Pulses provide essential complex carbohydrates, protein, fiber, amino acids, vitamins, minerals, and an array of phytonutrients like antioxidant flavonoids anthocyanins and polyphenols. Their amino acids, notably lysine and tryptophan, perfectly complement whole grain and so provide ‘complete protein.' High quality soluble fiber helps regulate blood sugar and lower cholesterol, while the insoluble fiber helps prevent constipation and digestive disorders. "Beans are probably the best human plant food there is,” plant geneticist George L. Hosfield, Ph.D., told Reuters Health. “With the additional bonus of their antioxidants, you have almost the perfect food." He explains that beans are full of protein and fiber and low in fat, and also contain the important vitamins and minerals - folic acid, iron, potassium, and zinc.

Beans are a water efficient way to grow protein. They require 43 gallons of water to produce one pound. Whereas a pound of beef requires anywhere from 441 to 5,214 gallons of water. The figures widely vary, depending upon who is providing them.

Rice & Bean Patties

Ingredients

• 15 oz EDEN Brown Rice & Kidney Beans, 1 can
(or any EDEN Rice & Beans)
• 15 oz EDEN Brown Rice & Pinto Beans, 1 can
(or any EDEN Rice & Beans)
• 2 cups organic whole wheat bread crumbs
• ½ cup onions, small diced
• ½ cup red bell pepper, small diced
• 1 clove garlic, finely minced
• 6 Tbsp organic sweet corn, fresh or frozen
• 2 Tbsp fresh parsley, minced, or 1 T. dried parsley
• 3 to 4 Tbsp EDEN Extra Virgin Olive Oil, for frying patties

How To Make

Mix all ingredients together, except the oil, in a medium mixing bowl, cover and set aside for 30 minutes allowing the bread crumbs to absorb moisture from the rice and vegetables, firming up the mixture.

Place place 1 tablespoon oil in a medium cast iron skillet, heavy stainless steel skillet or a griddle. Heat the oil. Take a handful of the rice mixture and form a ball, then flatten slightly forming a round, thick patty. Place in the hot oil. Form 3 more and place in the skillet. Cook over medium heat until a crispy, brown crust forms on the bottom. Flip over and cook until browned and crispy. Remove and repeat the process until all of the patties are done, adding oil to the skillet as needed.

Serve as is with EDEN Mustard, on a bed of lettuce with your favorite salsa, or on a whole wheat bun with your favorite toppings.
