Key to Well-Being

For more than 10,000 years whole grain has been the core of human sustenance. It is key to human well-being and longevity, heartily providing nutrients in optimal amounts. It is the foundation for sound constitutions and robust health. Only in recent history have we moved away from this, with corresponding health troubles. 140 years ago the United States had about 22,000 commercial flourmills, now there are less than 200, less than 1%. The clever ability to turn grain into its three components, selling the carbohydrates as ‘refined’ and ‘enriched’ flour to people, was done so that the other two pieces, the bran and germ, could be sold as inappropriately cheap and very nutritious animal feed.

This misguided centralized milling scheme created monopolies that rob citizens of wealth, replacing it with overvalued, superficially sensual food encouraging a monoculture society where freedom at all levels inextricably erodes.

The removal of bran and germ from grain to ‘extend shelf life’ while at the same time providing abundant cheap animal feed seemed like a good and profitable idea at the time. However, removing essential nutrients from our diets including fiber, fatty acids, B vitamins, and countless others including minerals and phytonutrient antioxidants, has caused untold suffering in personal and societal degradation.

The unforeseen long-term consequence of this adulteration has been catastrophic. Worldwide nutritional deficiencies have caused an ongoing epidemic of health woes. “Frankly, we are only just realizing the nutritional fallout from almost eliminating whole grains from our diet over the past 100 years... switching to whole grains is one of the most important things you can do for your health,” says Elaine Magee, RD, of the WebMD Weight Loss Clinic. Millet Mashed Potatoes w/
Mushroom Gravy

Serves 4 | Prep Time 15 mins | Cook Time 35 mins

Millet Mashed Potatoes with Mushroom Gravy

Ingredients

• 2 tsp EDEN Extra Virgin Olive Oil
• 1 medium onion, small diced
• 1 clove garlic, minced
• 1 cup Organic EDEN Millet, washed, drained
• 4 cups cauliflower, chopped
• 3 cups water

Mushroom Gravy

• 1 Tbsp EDEN Extra Virgin Olive Oil
• ¼ cup onion, finely minced
• 1 cup button mushrooms, finely chopped
• 1 cup baby portobello mushrooms, finely chopped
• ½ tsp EDEN Sea Salt
• 2 Tbsp organic unbleached white flour
• 2 cups EDENSOY Unsweetened
• 1 tsp EDEN Mirin
• 1 dash tsp freshly ground black pepper, or to taste
• 2 Tbsp fresh minced parsley, for garnish

Directions

Heat oil in a medium saucepan and sauté the onions and garlic for 2 minutes. Add millet, cauliflower, salt, and water. Cover and bring to a boil. Reduce the flame to medium-low and simmer for 30 minutes.

While the millet is cooking, heat the oil for the gravy in a medium skillet and sauté the onions and mushrooms with the sea salt for about 5 minutes. Add the flour and stir constantly until vegetables are coated. Slowly add the EDENSOY, stirring constantly until the sauce thickens. Add the mirin and pepper. Simmer about 10 minutes.

When the millet is done, remove from the flame and mash with a potato masher. Serve with mushroom gravy ladled over and garnish with parsley.
