Small Farms Could Feed the World

Studies of agricultural yields in several different countries reach a consistent conclusion: Small farms produce much higher amounts of food per acre than large farms. In many cases the differences are staggering. “But the prejudice against small farmers is unchallengeable,” writes George Monbiot in The Guardian, “It gives rise to the oddest insult in the English language: when you call someone a peasant, you are accusing them of being self-reliant and productive.”

Rice and Beans

It is the name of a restaurant in Manhattan, a band in San Antonio, a song by Michael Franti. Rice and Beans is a term reminiscent of basic sustenance in almost all cultures, and the flavors that make them unique. Cocoa BeansThese two foods are a symbol of simple, good things that go hand in hand. Rice and beans combined are not only comforting but the perfect complement nutritionally, delivering ‘complete’ protein with all the amino acids and a wealth of vitamins, minerals, and important fiber. Rice and bean dishes are popular in nearly every corner of the world, especially in Latin America. Early Portuguese settlers brought rice to Brazil and the Spanish introduced it around the Caribbean. As the cultivation of rice spread throughout Central and South America and the Mississippi Delta, people created tasty dishes combining rice and beans with regional seasonings, and variations were handed down through generations. For example, while many of the recipes for Red Beans & Rice can be traced back to a root style – Cajun, Creole, New Orleans, South Louisiana – there are thousands of variations from family to family and region to region.

• 15 oz EDEN Organic Rice & Kidney Beans
• 15 oz EDEN Organic Rice & Pinto Beans
• 2 cups organic whole wheat bread crumbs
• 1/2 cup onions, small diced
• 1/2 cup red bell pepper, small diced
• 1 clove garlic, finely minced
• 1/3 cup organic sweet corn
• 2 TBSP fresh parsley, minced (or 1 TBSP dried parsley)
• 3-4 TBSP EDEN Extra Virgin Olive Oil (for frying burgers)

Mix all ingredients together, except the oil, in a medium mixing bowl, cover and set aside for 30 minutes allowing the bread crumbs to absorb moisture from the rice and vegetables, firming up the mixture.

Place place 1 tablespoon oil in a medium cast iron skillet, heavy stainless steel skillet or a griddle. Heat the oil. Take a handful of the rice mixture and form a ball, then flatten slightly forming a round, thick burger. Place in the hot oil. Form 3 more burgers and place in the skillet. Cook over medium heat until a crispy, brown crust forms on the bottom of the burgers. Flip over and cook until browned and crispy. Remove and repeat the process until all of the burgers are done, adding oil to the skillet as needed.
